Ingredients:

1 kg beef cheeks

2 tbsp salt

1 small handful of fresh thyme

2 bay leaves

400ml chicken or beef stock

2 carrots, sliced

1 zucchini, diced

1 stalk of celery, diced

4-5 button mushrooms, diced

1 cup peas

1 onion, diced

4 cloves of garlic, minced

Fat for cooking - ghee, lard, tallow, coconut oil

Method

1. Heat 1-2 tbsp fat in a medium sized fry pan. Lightly brown beef over medium heat to seal and then remove and place in the bottom of your slow cooker.

2. Heat another 1 tbsp of oil in the same pan, add garlic, onion, celery, zucchini and carrot to the pan and sauté over low heat for 5 minutes. Add to the slow cooker.

3. Pour into the cooker the stock thyme and salt.

4. Close the lid and cook on low heat for 8 hours or high heat for 4 hours.

5. 30 minutes prior to serving, add peas and diced mushrooms, reseal and continue to cook.

Once ready to serve, shred beef cheeks over a bed of mashed cauliflower or steamed spinach/ greens.
