Spiced-Up Muffins

When Monday comes around a bit too quickly and Dylan's lunch box is looking a bit too boring, these are my favourite muffins to whip up, 5 minutes prep time and 15-20 minutes cooking time! 

Spiced-Up Muffins (makes 24 mini) 

Ingredients:

350g Cashews

20g Honey (more if you like sweet!)

80g Butter

4 Eggs

1 tsp Bi Carb

1 tsp Cinnamon 

1 tsp All Spice

1/2 tsp Ginger 

1/4 tsp Clove

1/2 tsp Cardamom 

1/2 cup raisons (soaked in hot water if you want them juicy.... and if you have time!)

Method:

- Preheat oven to 170 degrees

- Line muffin tray with muffins cups

- Blend all ingredients together except raisins until thick batter

- Stir raisins through the batter - Spoon into muffin tray

- Bake for 15-20 mins or until golden and bouncing back
